About Us


Joshua Ozaras and Shannon Ozaras are the owners of The Chalkboard Restaurant. They were exposed to the restaurant business at a very early age.  Literally growing up in the hospitality business, their father, Ayhan Ozaras from Istanbul, Turkey owned restaurants since the 70’s.  Both Josh and Shannon officially started working in the food and beverage industry in their late teens and performed virtually every restaurant job imaginable – from dishwasher and busboy to server, bartender and manager. 

Shannon Ozaras graduated from Murray State University in 2001 and moved to Tulsa.  Immediately starting at The Chalkboard restaurant, she had hopes of teaching Elementary School, although the restaurant business was always in her blood.  The years following, she helped open several sister restaurants with her father and brother.  She learned all that it takes to operate a successful business.  Back of the house, front of the house, bartending and managing, Shannon has done it all.  Today, she manages here and there, but mainly takes care of the bookkeeping and financials for The Chalkboard.

Josh started working in the kitchen where he washed dishes, prepped  and expedited food.  Then in his early twenties, Josh started waiting tables as he continued his education at Tulsa Community College.  He quickly learned the ropes of the service industry  and moved to their sister restaurant, The Garlic Rose, where he waited tables and bartended.  During that time he studied and received his first level sommelier and began writing wine lists and running their liquor program.  Before long, Josh started as the assistant manager.  In his mid twenties, Josh was promoted to be the General Manager.  After a few years, he moved to the corporate office and helped open and manage several other sister restaurants. 

At the beginning of 2012, Josh and Shannon’s father retired from the restaurant business where they had the opportunity to buy The Chalkboard and carry on the family business.  By taking ownership of the restaurant, they have honed the traditions and skills with a renewed sense of life and style.  


Catering & Events Coordinator

​Tracey is a Muskogee native that relocated to Tulsa in 2001 after a brief stint at The University of Oklahoma.  Upon arriving in Tulsa, Tracey was hired at The Chalkboard Restaurant and has been a key role player and valuable part of their team ever since.  Starting as a breakfast server, Tracey worked his way up the ranks within a few years to General Manager in 2005 and remained in that position until promoted in 2011 to Operations Manager of all four of the companies restaurant locations.  During this time, Tracey attended college classes concurrent with his full time employment, receiving his Associates Degree in Business from Tulsa Community College.  He then furthered his education at Oklahoma State University and received his Bachelors Degree in Management/Marketing in 2011.

When Josh and Shannon took over ownership of the company, he stepped down from his position and revisited his passion of bartending for a year until Josh and Shannon approached him to return to the leadership team.  Now an Operating Partner and General Manager, Tracey’s 18 years of restaurant experience helps him play a key leadership role in daily operations, staff training, along with assisting in continual growth and progression of The Chalkboard in the market. 

Tracey has an integral role in the Wine and Spirit program of the The Chalkboard which includes Wine list and Cocktail menu design.  He continues to create and design fun new ideas for the bar including award winning creations listed on the menu.  Tracey has completed the first level Sommelier program and is currently furthering his wine knowledge in hopes of receiving his Certified Sommelier title. 


Executive Chef

Chef Roque Heidler graduated from Haskell High School in 2004. Early on, he developed a passion for art and food which would ultimately lead him toward a career in the culinary industry. In 2007, he received the opportunity to work at The Brasserie Restaurant and Sonoma Bistro & Wine Bar where he began to hone his skills in the kitchen. After four years, Chef Roque took a short break from the culinary industry to assist a close friend in running Mission Street Tattoo.
Two years later, Chef Roque returned to the culinary world and began his two year stint at Juniper where he did all of their major prep. He also created daily soups, desserts, and helped with special menu items utilizing his special skill sets including plating and beautifully-balanced flavor profiles.
Chef Roque later moved over to another one of JTR group restaurants called Tavolo where he started making a name for himself around town for his unique dessert plating and artistic styles. Soon after, being fluent in several cuisines, Chef left Tavolo and began running the kitchen of Papa Ganouj focused around Lebanese infusion cuisine. There, Chef Roque held the position of Sous Chef where he helped in the creation of the menu and fabricated all of the desserts.
After six years of professional cooking and establishing himself in the Tulsa culinary industry, Chef Roque Heidler accepted a position at The Chalkboard Restaurant. He quickly rose in prominence and became Chef de Cuisine, where his ‘bright & loud’ gastronomic passion began to shine through and ultimately became a significant element of the continued success and functionality of the Tulsa staple. In 2016 ownership of the Chalkboard approached Chef Heidler with the opportunity to become executive chef and he has not looked back. He has been wowing guests and pushing the Tulsa culinary industry with every menu release and every chance he gets. As The Chalkboard’s executive chef, he has total control of creating fresh new seasonal menus every six months, and the opportunity to put his creativity on the forefront daily. Chef Roque Heidler is a young and exciting talent that will without a doubt continue to grow throughout his career.
